*Position: Sous Chef - Winery*
Hockley Valley Resort is looking for a professional Sous Chef to join our team. The successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers? satisfaction.
The individual will perform a range of duties including planning menus, training new staff, and recording inventory.
*Responsibilities and Duties*
· Reviewing reservations on a daily basis for execution and prepping.
· Briefing the Ala carte kitchen staff daily about prep work and daily reservations.
· Supervising and coordinating all activities of cooks and kitchen staff who are engaged in food preparation.
· Coordinating production and executing of dishes with the Restaurant Chef & team and the Restaurant manager
· Establishing the day?s priorities and assign production and preparation tasks for the kitchen staff/chefs to execute.
· Assisting in determining the minimum and maximum stocks of all food, cooking supplies and equipment.
· Assisting the Restaurant Chef & Executive Chef in menu development and execution, as well as menu planning and food purchasing.
· Maintaining inventory control procedures and ensure that the kitchen is prepared for the following day's work.
· Managing all day-to-day operations of the kitchen, including maintaining all equipment in a proper operational condition.
· Overseeing the regular cleaning of all equipment used in the kitchen while ensuring that each kitchen work area is stocked with specified tools, supplies and equipment to meet the resorts operating and business demand and all staff prepares menu items following recipes in accordance with the resorts operating standards.
· Reviewing sales and food cost with the Restaurant Chef & Executive Chef to ensure that the banquet kitchen is meeting budgeted costs.
· Monitoring the performance of the kitchen staff and ensure all procedures are completed to the department standards.
· Supervising kitchen shift operations and participating in kitchen employees progress and disciplining procedures, as well as training staff on menu items including ingredients, preparation methods and unique tastes.
· Planning and managing food quantities and plating requirements for all the dishes produced.
· Maintaining food preparation handling and correct storage standards.
· Reviewing staffing levels to ensure that guest service, operational needs and financial objectives are met.
· Ensuring compliance with all applicable laws and regulations.
· Assisting as needed in the interviewing and hiring of employee team members with appropriate skills.
· Identifying the developmental needs of kitchen staff and providing coaching, mentoring to improve their knowledge or skills.
· Planning and executing multiple outlets food orders.
· Understanding employee?s positions well enough and to perform duties in employees' absence.
· Helping in cooking and food preparation, as and when required.
*Requirements*
· BS degree in Culinary science or related certificate
· Red Seal Certification or Equivalent of 2+ years as a Sous Chef
· Cooking with equipment?s small quantity
· Using high temperature grills/griddles
· Using convection ovens
· Utilization of step-in coolers and freezers
· Usage of hot and cold bain marie
Job Type: Full-time
Pay: $29.58 per hour
