We are currently taking applications for the *2nd Chef *position to join our kitchen team*. *The 2nd Chef position is based on a *10-hour workday*.
This is a full-time, seasonal position from late May until early October. The exact dates to be confirmed. Accommodation, meals, and transport from Alder Bay RV Park & Marina to the lodge are provided. We also offer staff the opportunity to join tours when availability and scheduling permit.
*Our kitchen:*
During the peak season, you will prepare meals for up to 24 guests and 18-20 staff.
We have a daily buffet breakfast, a packed, picnic-style lunch for guests and staff on full-day tours, and an in-house lunch for arriving guests and guests on half-day excursions. Dinner service is a three-course meal also served buffet-style.
You will work with the Head Chef and the Breakfast Cook as a 3-person team, except on days off, when there will be a 2-person team.
The 2nd Chef assists the Head Chef in managing all aspects of the kitchen's operations, including:
* Ensuring that the quality, quantity, and presentation of all food meet the standards for freshness, appearance, and consistency
* Assisting in inventory control to coincide with delivery schedules & availability
* Assisting the Head Chef in planning and implementing the production of all meals
* Carrying out any and all duties assigned by the Head Chef
* Ensuring adherence to food safety regulations, hygiene, and cleanliness
* Ensuring cleanliness in all food preparation and storage areas and that each member of the kitchen staff maintains the highest standards
* Reporting all defective equipment for repair or replacement
* Working with the kitchen team to manage all food stocks to ensure as little wastage as possible and keeping accurate records of all food stocks
* Reporting to management on anything that requires attention or change regarding the lodge policies and/or standards
*The ideal candidate will have: *
* 3-5 years of work experience as a prep cook, baker and/or line cook
* Broad level of experience in the hospitality industry, including hands-on experience with an industrial dishwasher
* Excellent communication and interpersonal skills
* Effective time management skills
* Experience with camp-style remote living
* Excellent knife skills and their own tools to bring to the job
* Ability to accommodate dietary restrictions and food allergies
* Great attention to detail, keeping the workspace as clean and organized as possible
* Physical fitness is required in order to lift and carry cases of food, beer kegs etc.
* Commitment to working hard, being reliable and showing up on time
* Ability to be on your feet working for 10-hour shifts
* Flexible and adaptable to respond to the needs of other lodge departments
* Experience in inventory management, meal planning and budgeting is an asset
* Have or attain all the necessary certifications required for the position (BC Foodsafe Certification)
